It's safe to say that I'm a planner. Each Sunday before church I get up and get groceries for the next week and spend my Sunday planning out meals for the week to come. When I was working, I would spend my Sundays cooking so that I could come home, grab "choice" prepared meal out of the fridge, and shove it in the oven. An hour later, *voila* we had a home cooked meal with little to no preparation or clean up. Now that I'm not in as much of a time crunch, I spend "naptime" cooking. If time allows, I'll make enough to make 2 meals so that we can eat one and I can donate the other one to my freezer for days that things just don't go as planned. 2 meals + 1 clean up = one happy chef.
With the weather shifting and meals changing from "what's on the grill?" to "what's in the oven?" I am shifting my dinner line-up. I have been experimenting with lots of great new meals, thanks in part to the infamous "crock pot girls" on FB and my favorite dinner diva, "Iowa girl eats." There are a few things I aim for each week which might explain my menu...1. I try to do a beef, pork, chicken, fish or soup, and pasta each week. 2. Each meal has to have a vegetable and a fruit. Here's the line up this week.
Monday - Baked ziti, bread, salad, blueberries.
Tuesday - Chicken tortilla soup, bread, apple slices *mmm...fresh from the orchard
Wednesday - Pot roast, mashed potatoes, green beans, grapes
Thursday - Veggie burgers (Mark doesn't know they're not meat, shhhh) fries, kiwi
Friday - Chicken enchiladas, corn, peaches*
Saturday - Pork chops, baby reds, peas, grapes/kiwi
Sunday - Leftovers...possibly cereal since Mark is gone. :)
*Now that fruit is out of season it's getting harder to find strawberries, etc, so we may have to sneak back to frozen fruit again. Oh summer...how I'm missing you already.

Tony is working late nights and is getting fed at work- I've got conferences. Something quick and easy for me tonight! :)
