Garlic Chicken & Spinach Gnocchi

I have had a few people ask lately how I serve my gnocchi or what my "go-to" meals are. Well...here you go. Gnocchi is a busy-girls comfort food and a carb lovers dream. It cooks up in about 2 minutes so it's a perfect after-work meal and it tastes great with just about any kind of veggie so it's a great way to get my kiddos to eat more greens. It makes a delicious gnocci soup too. Because I have extra spinach from my green monster smoothie try-outs I went with chicken and spinach gnocchi for tonights dinner.

Garlic Chicken & Spinach Gnocchi

2-3 chicken breasts, diced
1 pkg gnocchi
2 large cloves garlic, minced
1 Tbsp olive oil
1 Tbsp butter
1/4 teaspoon salt & pepper
3/4 cup chopped spinach

Cook the gnocchi according to directions. Meanwhile, heat ~1 tsp of olive oil and add diced chicken in a large skillet over medium heat, until lightly browned. Add minced garlic and cook until softened 2-3 minutes. Add remaining olive oil (~2 tsp), butter, drained gnocchi, salt & pepper. Cook until gnocchi are golden brown on the bottoms. Use a spatula to flip the gnocchi. Add the spinach, tossing frequently, until the spinach is wilted, about 3 minutes. Enjoy!
