Where's the beef?

Welcome to Lent 2012! I'll be honest...I'm feeling pretty good about this one. I had the opportunity to attend Ash Wednesday mass with my daughters. That in itself, was pretty cool. Norah and Emma were rockin' their ashes...but, better yet, we all started our Lenten season off with the same challenge. Fr. Dave asked us to ponder what we will fast from and what we will feast on. I hate to admit that I prefer to go to school mass during the week more than regular mass on the weekends because of the "dumbed down curriculum" but God and I are cool like that, so I get a lot out of the school-aged masses.

Anyway, after mass the girls and I were talking and decided we would fast from playing and feast on praying. For 10 minutes each day, we will stop playing, set aside our toys, and do something for God. Learn more about him, make someone who needs it a meal, make a card for someone who needs cheering up, etc.

Yesterday, was a challenge for the girls. They abstained from snack at school, dessert after dinner, and didn't get hot dogs with their mac n cheese. Grace especially noticed how hard it was to give something up when she really wanted it.

As for me...I am working hard to come up with some meatless meals for our next few Fridays. Any good meatless recipes out there you'd care to share?

On a side note - I officially went 48 days without repeating a recipe...not a bad start to my NY resolution. I see a lot of repeats in the near future with the Lenten season upon us! Fish, fish and more fish. As for running I'm up to 51 miles in 54 days. So, I'm a few miles behind, but I should catch up on those this weekend.

You ROCKSTAR runner! Wowzers! I'm so proud of you. Marion Arts Festival 5k? Keep up the GREAT work! As for the meatless meals, I have the opposite problem. Rice and veggies, eggs (omelets), salads, salmon...etc are all my favorites. I made a veggie pasta (on my blog) that made TONS of food while I was marathon training. Lots of great carbs and any veggies you want with bread crumbs and a light cheese/milk sauce.

i did a modified version of IGE's twice baked potatoes -no bacon:(

they were excellent!!

the only problem with a main-dish vegetable is trying to figure out a side?! ...we paired it with a salad

As far as meatless meals go, I can probably only offer up ideas you've already thought about. Here are some of the ones in our rotation: pancakes, french toast, grilled cheese and soup, three cheese pasta bake (using mozzarella, cream cheese, and parm), spicy thai noodles, cheese (or veggie) flatbread pizzas (the kids love these because they can make their own pizzas).
