The girls get really excited each year about the "theme" of their party. I try to make a cake for them based off their theme so I keep my fingers crossed each year that they will pick something easy. I was pumped when Grace said she wanted a rainbow themed party...easy. Uh, I thought. We started looking on pinterest for some cake ideas and of course she loved the one that looked the hardest to make. I figured I would try to accept her challenge, perhaps there would be a pot of gold waiting for me at the finish!
With a crazy week at school and a busy day the day of the party, I was really worried that limiting myself to a Friday night cake making session would go horribly wrong, so we prepped with rainbow cupcakes as a back up. I figured even if we didn't eat them, we could throw them in the freezer for a fun get together in the summer!
With 3 helpers in the kitchen I didn't get a lot of photos while we baked, but we started with 2 Betty Crocker moist cake mixes and followed the directions on the box.
I already had color gels in the cabinet...score! I think the color gels make brighter colors that the drops.
We split the 2 cakes up into 6 bowls and started mixing colors until the colors got Grace's approval!
We baked off each cake...350 for 15 minutes each.
Once the cakes cooled we shaved the tops so that they would be completely flat to stack. The girls loved having a bowl of "extra" to snack on while we baked.
We started frosting middles and stacking our cake. At this point, my helpers headed to bed so I could finish the cake without so many hands. Too many cooks in the kitchen...literally. I rolled out some fondant...I think our kitchen was a powdered sugar cloud for a few hours and I found Mark so that I could have some steady hands help me pick it up and lay it over the cake. It ripped a few times and we had to re-roll it, but we eventually got it placed and smoothed. At this point I was running out of time and still had some present wrapping and party planning to take care of so I didn't take the time to cut the sides to make it fit. Instead I just folded them over and tucked them under the cake.
A little frosting around the top and bottom edges, a frosting cloud and some rainbow skittles and her cake was complete.
