Dinner time is the roughest hour of almost every working moms day, so I hate to complain too much about it. However, after a few rough weeks of DESPISING the dinner hour, I came up with a plan to help us thrive during our rough hour instead of merely survive. Sunday afternoons I meal plan, prepare, and cook what I can to transform a short afternoon prep session into a weeks worth of happy after school times. This weekend, I was gone. No meal prep + No plan = No sanity. Whoever said two negatives make a positive, I may need a few math lessons.
Dinner time always starts off great. The girls have a snack on the car ride home, we find some toys and puzzles to play with and get the big girls started on homework so I can have a little time to prepare. However, it always goes from this happy go-lucky child to....
...this crabby "I-can't-hold-it-together-any-more-why-isn't-dinner-ready-yet?!" child. No delicious recipes to share this week. Our weekly meals consisted of: Tacos, Spaghetti, Mac N Cheese, Leftovers, and....oops, more Leftovers. To top off these fabulous meals, every one of them was served with a side of sass.
